About: Produced by Melky Chavez and her family. For this microlot, cherries were strictly picked with the same level of ripeness and exposed to a dry anaerobic fermentation of 35 hours. They were then pulped and shadow dried in parabolic beds to ideal moisture content.
Melky started growing Varied Colombia varietal since 2000, in 2005 she sold her first specialty lot to the FNC and since she has focused in producing high quality coffee in order to achieve better prices and keep supporting her family.
